Cauliflower Pizza recipe from the I Quit Sugar Kids Cookbook!

To give you an idea of what I Quit Sugar Kids Cookbook is all about we thought we’d share one of our favourite recipes from the book: Cauliflower Pizza (you’d never guess it contains 1-2 serves of veggies). Sarah’s recipe was for a ham and cheese version so we have substituted some vegetarian ingredients. Her book has plenty of vegetarian options for you like Salt & Vinegar Kale Chips, Cauliflower Mac & Cheese, Pumpkin Baked Beans or Pumpkin Muffins!

As with all the recipes in the book, the pizzas below are dense in nutrition with lots of extra veggies. They contain healthy fats for proper absorption of essential vitamins A, D, E, K. And your kids can build their own, too, which is a great way to involve them in preparing their own food, which, in turn, is the best way to get them eating well.

Cauliflower Pizza

Cauliflower is such a versatile ingredient; you’ll find it pop up quite a bit throughout this new cookbook. This recipe uses cauliflower as a base instead of regular pizza bases. I suggest you buy a whole cauliflower and prep these in advance. It’s quick and easy. You can also freeze the bases for fast, easy meals on busy days.

Crust:

  • 1 medium-sized cauliflower, grated (by hand or in a food processor until it’s rice-sized, but not pulverised) and par-cooked, well drained, cooled slightly and water squeezed out
  • 100g goat cheese or 1 cup grated Cheddar
  • 1 egg
  • salt and freshly ground black pepper, to taste

Topping:

  • 1/3 cup Homemade Tomato Sauce or a commercial equivalent (check the back to see if its low salt and no sugar)
  • 100g mushroom, spinach, capsicum (or whatever veggies you like!)
  • 1/2 cup grated Cheddar cheese
  • 1 teaspoon coconut oil

Preheat the oven to 200°C and line a baking tray with baking paper. To make the crust, in a bowl, mix the cauliflower with the cheese and egg, and season with salt and pepper. Using a wooden spoon or your hands, shape the mixture into 1 large pizza base or 4 small crusts. The bases should be about 1–1 1/2 cm thick. Bake for about 30–35 minutes, or until firm and golden, then remove from oven. To make the topping, smear the Tomato Sauce over the base. Sprinkle half the cheese and then scatter the mushroom, spinach, and capsicum on top. Sprinkle the rest of the cheese. Bake for a further 8–10 minutes, until the cheese has melted and serve warm.
